MICROWAVE Eggs, Sausage and Potato Lunch

If you are looking for a simple, balanced meal you can make in under 15 minutes, this is the one for you! It's got lots of protein and fiber to help you poop -if that's something you're into. - It is also gluten free and dairy free. I enjoyed this as a simple meal prep recipe I made before bed so I could have it for lunch the following day. Even having prepped this half asleep it still came out great.

 

Ingredients:

-2 eggs

-2 sausages

-2 tbsp nutritional yeast

-1tsp olive oil

-Seasonings of choice (I prefer Tajin, - pepper, and turmeric)

 -Mini peppers slices (or veg of choice) (can be frozen veg for convenience!)

-1 sweet potato/normal potato, or sub that for toast. I used a purple sweet potato, don't worry if yours is just orange!

-Ketchup

-Optional hot sauce (I used jalapeño Cholula)

-Optional cheese (I skipped this!)

 

 Directions:

 1. Lightly oil/spray your container and crack both of your eggs in. Add the nutritional yeast, olive oil, seasonings of choice, and hot sauce if you have it. Whisk until mixed.

2. Add in sliced peppers or veg of choice and mix a bit more until they are incorporated into the egg. Place your frozen sausages on top.

3. Microwave on high for 3-4 minutes, or until the egg is no longer runny or drippy. It will look like an egg loaf (lol)

4. Use a fork to pierce holes all over your sweet potato and throw it in the microwave for 5-7 minutes (until it is softer outside and inside.) Warning: will be a hot potato! If you used toast, easy peasy, just have that with it instead.

5. Cut the potato into chunks and put it on the eggs. Or, just have it on the side. Top with ketchup or sauce and seasonings of choice and enjoy. Works great as a simple meal prep or a quick healthy, high protein and high fiber lunch! Feel free to adjust the number of eggs and sausage accordingly, this recipe will work with more eggs and more sausage, will just require longer microwave time.
